It just occurred to me after looking for flour in my pantry for a roux, the #should-be-obvious thing that this article missed is that we DO have soft-wheat flour up #north, it's just called "cake flour". Because #biscuits are a type of savory #cake, not #bread. https://getpocket.com/explore/item/why-most-of-america-is-terrible-at-making-biscuits
